Blueberry Quinoa Muffins

I’m always baking up some kinda of tricky treat for the kids. This one sneaks in the amazing protein packed seed quinoa! They’ll never know these are actually good for them.

Ingredients:
1 c cornmeal
1 c whole wheat flour
1 c cooked quinoa
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 c maple syrup
1/2 c applesauce
1/4 c canola oil
1/2 c milk
1 c blueberries

Preheat oven to 375 and line muffin pan.

Combine dry ingredients, mix in wet ingredients, stir until well combined.

Bake 20 minutes.
