Cottage Cheese Waffles with Peach Honey Sauce

These were so good they were devoured before I could snap a pic! 

4 tbsp butter, melted
1 3/4 c flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 c cottage cheese
1 c milk
2 eggs, beaten
2 1/2 tbsp honey

Preheat waffle iron. 

Mix dry ingredients together. Whisk together wet ingredients. Combine.

Cook in the waffle till golden. Serve with Peach Honey Sauce.

Peach Honey Sauce
2 ripe peahes
2 thsp lemon juice
2 tbsp honey

Combine in blender and puree.


Cottage Cheese, Tomato & CucumberĀ 


A simple, quick and healthy salad. 


  • 1/2 c cottage cheese
  • 2 tomatoes, cored and sliced thin
  • 1 Kirby cucumber, sliced thin
  • Salsa
  • Red hot salt

Red Hot Salt

  • 2 tsp salt
  • 1 tsp espellette pepper
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika

Combine in a jar.

Arrange tomatoes and cucumbers on a plate, sprinkle with red hot pepper. Place cottage cheese in center and drizzle with salsa.

Serves 1. 2 WW PP. 

Honey Cottage Cheese Waffles


I love Dorie Greenspan – every recipe of hers that I have ever cooked has turned out amazing! These waffles sounded a bit odd, but I had some cottage cheese on hand so I thought I would give them a try. They are crispy in a burned sugar way on the outside and creamy on the inside – Dorie never let’s me down!

4 c flour
4 tsp baking power
2 tsp baking soda
1 tsp salt
1 stick butter, melted
4 eggs, beaten
2 c milk
2 c cottage cheese
4 TBSP honey, warmed in microwave

Combine wet. Combine dry. Mix together. Cook in waffle iron until crisp.


Makes a lot! I freeze the extra perfect for weekday breakfast.
