Apple Brie Grilled Sandwich

This is my version of Skinny Taste’s sandwich. I added some mustard and used thinly sliced apples.

  • 4 slices of bread
    1 Apple sliced thin
    TJs light brie or other soft cheese (remove the ribs if using brie)
    Fig spread

Spread fig spread on 2 slices of bread, top with thinly sliced apples and brie, spread Dijon on the other two slices and top with thinly sliced apple, and sandwich together. Spread some butter on the outside of the bread and cook low and slow on a griddle until they outside is toasted and the cheese is melted. Flipping a couple times so it browns evenly. Cut in half and serve.

Serves 2.

Apple Berry Hot Brie

Simple and delicious! I put my spin on the fav of OLG moms!


  • 1/2 c apples, diced small
  • 1/4 mixes dried berries (I used TJs with strawberries, blueberries and cherries)
  • 1 TBSP brown sugar
  • 1/4 tsp cinnamon
  • 1 TBSP butter, melted
  • 1/4 c almonds, toasted and chopped
  • 1 round of brie

Preheat over to 350.

Combine all ingredients except Brie in a bowl and stir to combine.

Slice Brie in half and place the bottom layer on a baking dish, top with 1/2 the mixture on the Brie, top Brie top and the rest of the mixture.

Bake for 12 – 15 minutes until Brie is just melting. 

Serves 8.
