Creamy Cauliflower

I made a vegan version of this delicious cauliflower dish and added a drizzle of truffle oil.

  • 1 head of cauliflower, cut into florets
  • 1 c almond or regular milk
  • 1 tsp salt
  • 1 tsp nutmeg
  • Truffle oil

In a medium saucepan poor milk over the cauliflower and steam on low for 15 minutes until tender.

Pour into a blender and purée till smooth. Pour back into a pan, stir in nutmeg and salt and keep warm. Serve with a drizzle of truffle oil.

Serves 4.

Green Smoothie # 2

This one has everything but the kitchen sink in it as far as antioxidants go, and the added kick of matcha to get my day started.

This one has Ingredients:
1 banana
1 c frozen pineapple pieces
1 c spinach, or kale leaves
1 c unsweetened almond milk
2 TBSP almond butter
2 TBSP flaxseed oil
1 tsp agave syrup (nectar)
1 tsp matcha (green tea powder)
1/2 tsp finely grated peeled ginger

Toss in a blender.

Serves 1.

Peanut Butter and Banana Smoothie

I start almost everyday with a green smoothie, but every once in awhile I like to mix things up. This one is like drinking dessert !

Ingredients:
1 ripe banana
2 TBSP peanut butter
1 tsp raw cacao nibs or dark chocolate
1 tsp honey
1/2 tsp vanilla
1 c almond milk
1/4 c greek yogurt
1 TBSP extra-virgin coconut

Combine all the ingredients in a food processor or blender. Puree until smooth.

Serves 1.
