Taco Bowl Salad

This is not so much of a recipe as taking advantage of  well stocked pantry. Perfect for a quick less than 30 minute meal.

1 lb turkey of beef, ground
1 pack taco seasoning, I like TJ’s
1 16 oz container of salsa
1 onion chopped
1 4 oz can green chilies
1 head of romaine, chopped
1 c cherry tomatoes, sliced in half
1 c shredded cheese – pepper jack, cheddar
Slices jalapenos
Sliced olives
6 green onions, sliced thin
4 large flour tortillas
Olive oil spray
Any other fav taco fixins I missed

Preheat oven to 425.

Spray the inside of a large aluminum bowl with olive oil. Lightly spray a large flour tortilla with olive oil and put in the bowl to form a bowl. Bake for 5 – 7 minutes – watch it – it goes from perfect to burnt quick.

Let cool and repeat as needed.

In a medium pot heat 1 tsp olive oil, add onions and cook till soft. Add the meat and seasoning and cook until almost brown, stir in the salsa and cook until mostly absorbed over medium high heat.

Fill your tortilla bowl with your fixings and serve.
