Slow Cooker Salsa Verde Chicken
The only person who may love crazy Tacos more that me is the author of Skinny Taste. This recipe is so easy – perfect for a crazy weekend. If you are in a real time crunch, use the pressure settting on your multi cooker. Don’t have one yet? You should treat yourself! You can top the tacos with yoir fav toppings.
1 lb chicken thighs
Salt and pepper
2 tsp ground cumin
1 tsp chili powder
1 c salsa verde
Shredded jack and cheddar cheese
1 bunch of scallions, chopped
1 bunch of romaine chopped
1 can sliced olives
Place the chicken in the multi cooker and season with salt and pepper, sprinkle with cumin and chili powder. Pour salsa on top and cook for 4 hours on low. Using two forks, shred the chicken and place back in the pot.
Wrap the tortillas in a damp cloth and microwave for 4 min on 50% power.
Fill each tortilla with chicken, cheese, romaine, scallions and your favorite salsa.
