Salmon and Caviar on Cucumber

  
I came up with this for a NYE – super easy and it was a hit!

Ingredients:

• 1 hot house cucumber
• 4 oz smoked salmon
• Creme fraiche
• Caviar

Using a mandolin, slice cucumber 3/8 thick. Top with a piece of salmon, dollop of creme fraiche and caviar.

Makes about 24.
