Pasta with Sun Dried Tomatoes and Spinach
8 oz pasta
1/2 c half and half
1/4 cup sun dried tomatoes, chopped
1 clove garlic, minced
1 bag spinach
1/4 c ricotta salata
Toasted pine nuts
Cook pasta according to package.
In a 12 inch skillet heat half and half, tomatoes and garlic over medium low heat. Add spinach, cook until wilted, then stir in pasta. Top with Aleppo, pine nuts and ricotta salata.
