Buffalo Cauliflower

This may be my new favorite way to eat cauliflower! And so much healthier that chicken wings.

1 head cauliflower, broken into florets
Canola oil
Salt and pepper
1/4 c hot sauce, such as Frank’s Red Hot sauce
1/4 c Sriracha
4 TBSP unsalted butter
Crumbled blue cheese

Arrange a rack in the middle of the oven and preheat to 375°F.

Toss cauliflower with a little canola oil, salt and pepper, and roast until the outside starts to brown, about 30 minutes.

Combine hot sauces and butter in medium pan over medium heat. Add cauliflower and toss to combine. Top with blue cheese.

Serves 4.
