This soup is amazing – spicy, thick with a hint of cilantro, Patricia Wells never let’s me down.
Ingredients:
1 1/2 lb ripe tomatoes, cored & quartered
1/2 c tomato paste
2 tsp salt
1 tsp Espelette
2 TBSP sherry vinegar
1 c cilanto
Combine in blender until smooth, add a little water if it’s too thick. Chill for at least 3 hours.
Serves 6.
