1 1/2 lb fresh cantaloupe, cut into small cubes (weight after seeded and cut)
1/4 c lime juice
2 TBSP vodka
1/4 c honey
1/4 c fresh mint
pinch of sea salt
Place the cantaloupe in the bowl of your food processor or Vitamix and process until smooth. Add the lime juice, vodka, honey, fresh mint and a pinch of sea salt and process for another 30 seconds or so. Place the mixture into the refrigerator until the mixture is totally chilled, about 1 hour.
Pour the chilled mixture into the bowl of an ice cream maker and process according to manufacturer’s directions.
Pack the melon sorbet into an airtight container, with wax paper or parchment paper pressed evenly across the surface of the sorbet, cover and freeze until firm, about 4 hours.
Makes about 4 cups.
