Spicy Chicken and Mustard Green Soup


Sometime you just need a hot bowl of spicy soup on Monday Night. This one is perfect – lots of spice, lots of healthy greens and quick to make!

1/2 lb ground chicken
4 cloves garlic, minced
3 tsp finely grated ginger
1 tsp ground peppercorns
1 tsp red pepper flakes
1/2 tsp ground cumin
1/2 TBSP vegetable oil
4 c chicken broth
6 c mustard greens, roughly chopped
1 bunch of scallops, chopped
2 TBSP soy sauce
2 tsp fish sauce
Sciracha sauce on the side
Heat oil in a large pot over medium heat. Mix in chicken and spices and cook until browned. Add chicken broth and cook for 10 – 30 minutes to let the flavors deepen. Stir in greens, onions, fish sauce and soy sauce and cook for 10 minutes, stirring frequently.

Serves 4.

Oats and Yogurt with Orange, Coconut and Cacao Nibs


This recipe is from The BACleanse and it is a winner!! You oats are soaked in the yogurt overnight so you need to start this the day before.

2 tsp toasted unsweetened flaked organic coconut
1/2 orange, peeled and chopped
Orange juice from the other half
2 Medjool date, pitted, finely chopped
1/2 c plain non-fat Greek yogurt
1/3 c old-fashioned oats
2 tsp cacao nibs

Combine orange, date, juice, yogurt and oats in a bowl. Refrigerate overnight.

In the morning stir in the coconut and cacao nibs right before you eat.

Serves 1.
