Buffalo Salmon

This recipe is super easy and packed with flavor! Perfect for quick and healthy weeknight meal.

Ingredients:
1 8 oz piece of salmon
2 – 4 TBSP thick buffalo wing sauce
1/4 c panko crumbs
Salt and pepper
Olive oil spray

Preheat oven to 425.

Line a pan with parchment paper. Place salmon on parchment, season with salt and pepper, spread buffalo sauce over chicken, top with panko and spray with olive oil.

Bake for 15 – 17 minutes.

Serves 2.

Spicy Spinach

This one is from epicurious. My husband is not usually a fan of cooked spinach, but he loved this flavorful number . The best part it takes less than 10 minutes to cook. I served this with buffalo salmon and farro.

Ingredients:
2 TBSP ghee or olive oil
1 bunch of scallions, chopped
3 cloves garlic, minced
1 tsp red pepper flakes, or more to taste
1 tsp brown mustard seeds
1 tsp yellow mustard seeds
1 large bag baby spinach
Salt and pepper

In a 12 inch skillet, hear ghee over medium heat, add everything except the spinach and cook for 1 minute. Add spinach and cook for 3 – 5 minutes until the spinach starts to wilt. Season with salt and pepper.

Serves 2 – 4.
