Pasta with Pancetta, Spinach and Creme Fraiche


A great weeknight meal that comes together quicker than you can order takeout, that’s why I love pasta! I prefer creme fraiche, but you can use heavy creme if you prefer.

10 oz pasta
4 oz pancetta, minced
8 oz creme fraiche
16 oz spinach
3 cloves garlic, minced
1/4 c Parmesan cheese
1/8 c pine nuts

Bring a large pot of water to a boil and cook pasta according to directions.

In a 12 inch skillet cook pancetta until crispy, add garlic cook for 2 minutes. Add spinach and creme fraiche to the pan and cook for 4 minutes, add pasta and cheese and cook for 2 minutes.

Serve with pinenuts.

Serves 4.
