Pasta with Asparagus Pesto

This is a double dose of asparagus!! Pasta tossed with asparagus pesto, asparagus and some toasted bread crumbs! Super yummy!

Ingredients:
Pesto
1 lb asparagus, cooked 3 minutes and chopped
1/2 c olive oil
1/4 c grated Parmesan cheese
1/4 c pine nuts
4 cloves of garlic

Combine in a food processor or Vitamix and process till smooth.

Pasta:
1 lb pasta
1 lb asparagus, chopped into 1/2 inch pieces
1/4 c bread crumbs
Parm cheese

Bring a large pot of salted water to a boil. Cook asparagus for 3 minutes, remove from water and put into a large bowl.

Cook pasta according to package.

In a nonstick skillet sprayed with olive oil, toast breadcrumbs.

Toss pasta with asparagus and add pesto until nicely coated. Top with cheese and bread crumbs.

Serves 4.
