Spicy Sausage and Asparagus over Polenta

After one of those days I needed a big bowl of comfort food and something I could whip in less than time than it would take to order take out. I came up with a quick mixture of sausage and asparagus served over creamy polenta. If you don’t have green garlic, use 3 minced cloves of garlic.

Ingredients:
1 lb spicy sausage, casing removed
1 large onion, diced
1 bunch of green garlic, chopped
1/2 c white wine
1 lb asparagus, cut into 1/2 inch pieces
2 TBSP lemon juice
2 tsp Italian seasoning
Creamy polenta (i microwave mine)
Ricotta Salata

In a 12 skillet, cook sausage and onions over medium heat until brown. Add garlic, wine, asparagus and Italian seasoning, cover and cook for 5 minutes. Stir in lemon juice.

Serve over polenta, topped with Ricotta Salata.

Serves 4.
