Spinach Pesto

This dish is bright green due to freshness of the lovely spinach. it is a quick and easy dish and the perfect weeknight meal as it can be prepared in less than 15 minute.

Ingredients:
2 c spinach
1/2 c pine nuts
1/4 c Parmesan
3 cloves garlic or green garlic
2 TBSP olive oil
1/4 – 1/2 c water
1/4 tsp sale
1/8 tsp pepper
1/2 lb pasta

In a food processor or blender combine all ingredients and 1/4 c water. Blend or pulse, add more water as needed.

Cook pasta according to directions. Toss with pesto.

Serves 2 – 4.
