Creamy Spinach

This creamy spinach is awesome! it is perfect for a weeknight meal. i served it with veal and polenta.

Ingredients:
4 TBSP unsalted butter
2 lb spinach
1/2 c grated Pecorino
1/4 c crème fraîche
1 tsp Dijon mustard
Salt and pepper

Melt butter in a large pot over medium-high heat. Working in 4 batches, add spinach to pot, tossing to wilt between batches. Stir in cheese, crème fraîche, and mustard. Using an immersion blender, regular blender, or food processor, purée spinach mixture until very smooth. Season to taste with salt and pepper.

Serves 4.

Black Bean Tacos

This is a quick weeknight meal that packs a flavor punch! And who doesn’t love tacos?

Ingredients:
1 head of cabbage, chopped
Juice and zest from 2 limes
1/4 c cilantro, chopped
1 TBSP canola oil
1 onion chopped
1 tsp canola oil
2 cans black beans, rinsed
1 can green chilies, diced
Cheese, grated
Tortillas

Combine cabbage, lime zest & juice, cilantro and 1 TBSP canola oil, toss and refrigerate until ready to use.

In a medium pan, heat oil and cook onions until soft, about 5 minutes. Add black beans and chilies cook for 30+ minutes covered over low heat.

Heat a non stick skillet over medium heat. Heat tortillas for about a minute per side, fill with beans and cabbage, top with cheese.

Serves 4 – 6.
