Asian Chicken Soup


Wednesday night, worked a little later than usual, sick kids, sick hubby, tired mommy – what is a gal to do? After looking in the fridge I came up with his Asian inspired soup. Quick and easy and perfect for a cold night.

4 c chicken stock
2 tsp 5 spice
1 TBSP fish sauce
2 TBSP chives
1/4 tsp garlic powder
2 c roasted chicken, chopped
2 c grated carrot
2 zuks, grated
8 oz rice noodle
6 green onions, chopped
2 jalapeños, sliced

Heat stock over medium heat, add 5 spice, fish sauce, chives and garlic powder bring to a boil, reduce heat and simmer for 10 – 30 minutes.

Add chicken, carrot, zuks and noodles, cook for 5 minutes.

Serve topped with jalapeño and green onion.

Serves 4.
