My kids are a little bit picky, ok, really picky. This is something I came up with to get my boys to eat something other than chicken nuggets and it worked!!
1/4 c maple syrup
1/4 c apple juice
2 TBSP Dijon mustard
2 TBSP olive oil
Salt and pepper
1 lb pork tenderloin
Combine ingredients in a ziplock bag and marinade meat for 4 – 24 hours.
Preheat oven to 425.
Roast pork for 18 – 22 minutes until it reaches and internal temperature of 140.
Let rest 10 minutes, then slice.
Serves 4 – 6.
