Early spring has hit my local farmers market which means asparagus, green garlic and pea tendrils – yum!! In this quick healthy dish I bring all this early spring goodness together.
1 bunch of asparagus, tough ends snapped off
5 heads of green garlic, sliced thin
1 bunch of pea tendrils chopped
1/2 tsp balsamic vinegar
1/2 TBSP olive oil
Salt and pepper to taste
Heat oil in a large skillet over medium high heat. Add veggies, vinegar, salt and pepper. Sauté 5 minutes until asparagus is crisp tender and pea tendrils are wilted.
Serves 2 – 4
