Baked Salmon

This is a great week night meal. It takes a little over 30 minutes and you have free time to whip up a couple sides while the salmon bakes. I served it with roasted broccoli microwave polenta.

Ingredients:
4 4 oz salmon filets
1 TBSP olive oil
1 TBSP fresh chopped thyme
1 TBSP lemon zest
1 lemon sliced
Salt and pepper

Preheat oven to 275.

Combine olive oil, thyme and lemon zest in a small bowl.

Line a rimmed baking sheet with foil and brush with olive oil. Place salmon skin down on baking sheet. Spread thyme mixture over filets and season with salt and pepper. Top with thin slices of lemon. Let stand 10 minutes.

Bake 15 – 18 minutes until center is just opaque.
