Shallot vinaigrette

I always make my own salad dressing, it is so easy and tastes so much better than anything from the store. This dressing is so creamy and tastes great on any greens. I added sliced cucumber, green onions, radishes and hearts of palm to my salad.

1/3 c minced shallots
2 TBSP lemon juice
1/4 c olive oil
2 TBSP sherry vinegar
Lemon zest
Sea salt

In a blender or small food processor, chop shallots, then add the other ingredients and process until creamy, about 2 minutes.

Store any unused dressing in the fridge for up to one week.
