Rack of Lamb

I love rack of lamb! It always strikes me as a special occasion kind of meal, which seems silly since it is actually the perfect week night meal. This dish comes together in less than 40 min including cook time. It tastes wonderful and will impress the heck out of whoever you decide to share it. And what is better on a weeknight than some meaty goodness?

Ingredients:
1 rack of lamb
1/4 c parsley
3 cloves of garlic
1 TBSP fresh thyme
2 tsp fresh Rosemary
2 TBSP butter
Salt and pepper

Preheat oven to 375

In a food processor combine the garlic and herbs, process until finely chopped. Add butter, process until well combined.

Place rack in a roasting pan and season both sides with salt and pepper. Place far side up and press the butter mixture onto the rack. Put in oven.

Cook for 15 min and check internal temp, when it reaches 120 remove and cover with foil for 10 min. If it’s not 120, continue to cook checking every 5 min till done.

Serves 2.
